Ingredients
  

Apple Pie Trifle Ingredients

  • 1/2 Cup cashew nuts lightly toasted
  • 1/2 Cup coconut milk (gata)
  • 2 tablespoons raw sugar
  • 1/3 Cup refined coconut oil
  • 1 tablespoon vegetable oil
  • 2 Fuji apples peeled, cored, and cut into small cubes
  • 1/4 Cup water
  • 2 tablespoons raw sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 Cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1/4 Cup rolled oats
  • 1/4 Cup raw sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch Salt
  • 2 to 3 tablespoons vegetable oil

Instructions
 

  • Make the cream layer: Soak cashews in a bowl of boiling water for 1 to 2 hours or until soft. Rinse and drain. Process nuts and remaining ingredients in a food processor until smooth. Chill and let the cream thicken.
  • Make the apple layer: cook all ingredients in a saucepan over medium-high heat until bubbling. Lower heat and cook until apples are soft, about 12 minutes. Chill.
  • Make the crumble: preheat oven to 350°F. Line a baking sheet with parchment paper. Mix dry ingredients well in a bowl. Drizzle oil and mix until clumps form. Spread evenly on prepared baking sheet. Bake for 12 to 15 minutes or until browned. Let cool.
  • Scoop 1 tablespoon apples into a glass. Top with crumble and cream. Repeat to make another layer. Repeat to make 5 more glasses. Chill. Sprinkle with cinnamon, if desired.
