Asparagus, Grape, and Walnut Salad Ingredients

  • 1 bunch asparagus cut into 2-inch lengths
  • 1 teaspoon lemon zest
  • 1 1/2 tablespoon lemon juice
  • 1 teaspoon mustard
  • 1 tablespoon honey
  • 1 clove Garlic finely chopped
  • 1/4 Cup olive oil
  • 2 small heads Lettuce torn into bite-sized pieces
  • 1 Cup grapes seedless
  • 1/2 Cup walnuts broken
  • 1/4 Cup blue cheese crumbled
  • Salt to taste
  • ground black pepper to taste


  • Bring a pot of water to a boil. Add asparagus and blanch vegetables a few seconds, or only until the stalks become a vivid green. Remove from the boiling water with a strainer or slotted spoon. Plunge in ice water until cool. Remove from water, and set aside until ready to serve.
  • Place lemon zest, lemon juice, mustard, honey, and garlic in a large bowl. Whisk until well combined. While whisking, gradually drizzle olive oil into the bowl until mixture has emulsified and looks creamy. Season vinaigrette with salt and ground black pepper to taste.
  • To serve, divide lettuce into four salad bowls. Top with asparagus, walnuts, grapes, and blue cheese, and serve vinaigrette on the side. Recipe originally published in the July 2016 issue of Good Housekeeping.
