Ingredients
Bacon and Maple Toast Ingredients
- 1 500 gram wedge squash (kalabasa)
- 3 tablespoons Butter melted
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- 2 tablespoons maple syrup
- 4 strips bacon Chopped into 1-inch pieces
- 1/2 Cup shallots (sibuyas Tagalog) thinly sliced
- 1 12-inch loaf french bread
- green onion Chopped, for garnish
Instructions
- Preheat oven to 400°F. Grease a baking sheet with butter. Peel and seed squash. Cut into large chunks and toss in butter. Place squash on baking sheet in one layer. Bake for 20 to 30 minutes or until soft. Purée in a food processor. Add ground cinnamon, ground nutmeg, and maple syrup.
- Fry bacon in oil until crisp. Drain well. Fry shallots in the same pan until edges are crisp and lightly browned. Set aside.
- Slice bread diagonally into ½-inch-thick slices. Lightly toast until browned but still soft. Spread about 2 tablespoons squash mixture on each slice. Top with 1 teaspoon fried shallots, 2 pieces bacon, and sprinkle with chopped green onions.
