Ingredients
Bacon, Mushroom, and Spinach Omelet
- 1/4 Cup fresh button mushrooms sliced
- 2 teaspoons olive oil
- 2 strips bacon sliced
- 1/4 Cup spinach leaves
- 2 eggs Egg use yolks, beaten
- 1 tablespoon milk
- Salt
Instructions
- Combine fresh button mushrooms and olive oil in a microwaveable bowl. Cook on high for 30 seconds.
- Add cooked bacon (sliced), spinach, eggs, milk, and salt and pepper to the bowl. Microwave on high for 1 1/2 minutes or until completely cooked, slightly stirring mixture halfway through.
