Use your fave seasonal veggies for a filling meal.
3 cloves garlic, minced
2 tablespoons onion, diced
80 grams pork, (use pork belly), diced
3 cups rice, cooked
2 tablespoons bagoong alamang
3 cloves garlic, chopped
2 cups squash (kalabasa), cubed
1 cup eggplant, sliced into 1/2-inch rounds
1/2 cup string beans (sitaw), cut into 3-inch lengths
Saute 3 cloves garlic until fragrant. Add 2 tablespoons diced onions and saute until translucent.
Add 80 grams of pork belly, diced.
Add 3 cups cooked riced and 2 2 tablespoons bagoong alamang; mix until well combined.
In a separate saucepan, saute 3 cloves chopped garlic until fragrant. Add 2 cups squash and saute for2 minutes. Add 1 cup eggplant and saute for another minute.
Add string beans and continue to saute until all vegetables are throughly cooked. Divide into bowls.
