Ingredients
  

Baked Barbecue Ribs

  • 1/2 Cup balsamic vinegar
  • 1/2 piece white onion diced
  • 2 cloves Garlic minced
  • 1 Cup tomato ketchup
  • 1/4 tablespoon paprika
  • 1/2 teaspoon Cayenne pepper
  • 1 Table Spoon honey
  • 1/2 Cup brown sugar
  • 1/4 tablespoon Worcestershire sauce
  • Liquid smoke a few drops
  • 1 1/2 kilos pork use Baby back ribs
  • 1/2 Cup carrot diced
  • 1/2 Cup celery diced
  • 1 tablespoon white onion chopped
  • 10 grams (about 2 teaspoons) peppercorns
  • 10 grams (about 2 teaspoons) rock salt
  • 2 pieces bay leaf
  • Buttered vegetables to serve (optional)

Instructions
 

  • Make the barbecue sauce: combine all ingredients in a medium saucepan. Mix well. Boil, uncovered, for 5 minutes. Lower heat to a simmer, cover pot, and cook for another 10 minutes, stirring occasionally. Let cool.
     
  • Prepare the ribs: preheat oven to 350°F. Arrange ribs on a baking pan. Add carrots, celery, onions, peppercorns, rock salt, and bay leaf.
     
  • Add 3/4 of the cooked barbecue sauce. Reserve some sauce for basting. Cover pan with foil. 
     
  • Bake ribs for 1 hour. Remove foil and bake ribs for another 2 hours, basting with reserved sauce every 20 minutes. 
     
  •  Transfer ribs to a wire rack. Transfer sauce to a small saucepan and simmer over medium heat until thick, about 15 minutes. 
     
  •  Arrange baked ribs on a platter. Serve with extra barbecue sauce and buttered vegetables on the side.
     
    Tip:
    THE BARBECUE SAUCE CAN BE MADE 3 DAYS IN ADVANCE AND STORED IN THE REFRIGERATOR.
