Baked Barbecue Ribs

Make the barbecue sauce: combine all ingredients in a medium saucepan. Mix well. Boil, uncovered, for 5 minutes. Lower heat to a simmer, cover pot, and cook for another 10 minutes, stirring occasionally. Let cool.

Prepare the ribs: preheat oven to 350°F. Arrange ribs on a baking pan. Add carrots, celery, onions, peppercorns, rock salt, and bay leaf.

Add 3/4 of the cooked barbecue sauce. Reserve some sauce for basting. Cover pan with foil. 

Bake ribs for 1 hour. Remove foil and bake ribs for another 2 hours, basting with reserved sauce every 20 minutes. 

 Transfer ribs to a wire rack. Transfer sauce to a small saucepan and simmer over medium heat until thick, about 15 minutes. 

 Arrange baked ribs on a platter. Serve with extra barbecue sauce and buttered vegetables on the side.

THE BARBECUE SAUCE CAN BE MADE 3 DAYS IN ADVANCE AND STORED IN THE REFRIGERATOR.
