Ingredients
  

Baked Chicken with Peach-Pineapple Glaze

  • 4 large Chicken (use leg quarters), flesh scored diagonally
  • 1/2 tablespoon Salt
  • black pepper
  • 1/4 teaspoon dried thyme leaves
  • 2 tablespoons cooking oil
  • parsley sprigs for garnish
  • 1 Cup canned pineapple
  • 1 Cup bottled peaches diced
  • 1/4 Cup pineapple juice
  • 1/2 Cup peach syrup
  • 1/2 teaspoon Salt
  • 2 tablespoons Butter
  • 1/4 Cup brown sugar
  • 1/4 c brown sugar
  • 1/4 teaspoon black pepper
  • 2 tablespoons Vinegar
  • 2 cloves Garlic minced

Instructions
 

  • Preheat oven to 380ºF.
  • Rub chicken with salt, pepper, and thyme; let stand for 10 minutes.
  • Make the glaze: Combine all the ingredients in a saucepan and simmer until consistency is like syrup, about 10 to 12 minutes.
  • Heat a heavy bottomed pan until almost smoking. Add oil and sear chicken on both sides until golden brown. Transfer into an ovenproof dish. Pour glaze over and bake in the oven for 30 minutes. Transfer to a serving dish and garnish with parsley.
