1 cup all-purpose flour
2 tablespoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup sugar
4 pieces banana, (use overripe bananas), mashed
1/4 cup walnuts, chopped
1/2 cup raisins
1 teaspoon vanilla extract
Preheat oven to 325ÂºF.
Combine flour, baking powder, baking soda, and salt in a bowl.
In a large bowl, mix the melted butter and sugar. Beat until well blended. Add eggs, one at a time, then bananas. Stir in walnuts, raisins, and vanilla extract.
Pour into 9 x 5-inch loaf pan, lined with wax paper, and bake for 1 hour. Let cool.
Make the frosting: beat in an electric mixer using a paddle: combine cold cream cheese,Â cold butter, and vanilla. Add the sugar in three batches. Mix until well incorporated then add the fresh lemon juice.
