Banana Oat Bars Recipe

Preheat oven to 350°F. Lightly grease an 8x12-inch pan with butter.

In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and brown sugar on low speed.

Add eggs one at a time, then add vanilla extract.

In a separate bowl, combine flour, oats, and baking soda; mix well. Gradually add flour mixture to the butter mixture. Mix until a soft dough forms.

Reserve 1 cup of dough and spoon remaining dough into the prepared pan. Spread and pat dough evenly. Sprinkle a little flour over the dough if it gets too sticky to handle.

Pour condensed milk over the batter. Top with sliced bananas then sprinkle chopped walnuts evenly on top.

Using your hands, take pieces of the remaining dough and distribute them evenly on top.

Bake in the preheated oven for 30 to 35 minutes or until edges are brown and center feels firm. Let cool completely in pan. Cut into 2x2-inch squares before serving.
