There's a lactose-free version of the well-loved banana milkshake.
1 cup water
1/4 cup sugar
1/8 teaspoon salt
1/4 teaspoon ground cinnamon, more to garnish
1/4 cup day-old rice
3 pieces banana, lakatan variety
1 teaspoon vanilla extract
2 cups ice
In a saucepan over medium heat, dissolve the sugar, salt, cinnamon, and in the water with rice and bring to a simmer, cooking until the rice softens. Remove from heat and let cool slightly before placing in a blender and processing until smooth. Pour through a fine mesh strainer. Set aside to cool.
To serve, peel and slice bananas, then place in a blender. Add in cooled rice milk, vanilla extract, and ice; process until smooth. Pour into glasses, sprinkle more ground cinnamon on top, and serve immediately.
