Barbecued Chicken with Sweet Garlic-Chili Sauce

In a large bowl, mix together soy sauce, brown sugar, salt, and pepper. Add chicken thighs and let marinate while preparing the sauce.

Prepare the sweet garlic-chili sauce: In a small saucepan, heat oil. Sauté onions until translucent. Add garlic and ginger and sauté until fragrant. Add chili paste and stock. Whisk until sauce is smooth. Add brown sugar, soy sauce, and sesame oil; mix well. Let sauce simmer over low heat for 1 minute. Add sesame seeds and mix well.

Preheat an indoor grill to medium or heat a grill pan brushed with oil over medium heat. Grill chicken thighs, three to four pieces at a time, for about 6 to 8 minutes per side or until fully cooked.

Serve chicken with steamed rice, kimchi, and blanched spinach, if desired.
