Beef Rice Paper Rolls Ingredients

  • 1 medium star anise
  • 1/2 teaspoon peppercorns
  • 2 pieces Garlic grated
  • 1 inch ginger grated
  • 2 tablespoons rice wine
  • 1/4 Cup Soy Sauce
  • 1/2 teaspoon ground allspice
  • 1/2 Cup water
  • 1 Pack rice paper
  • 2 large Cucumber seeds removed, cut into thin strips
  • 2 large carrot cut into thin strips
  • red pepper flakes
  • Oil for frying

Instructions
 

  • Make marinade: Using a mortar and pestle, pound star anise and peppercorns until coarsely crushed. Add into a large bowl with the garlic, ginger, rice wine, soy sauce, and allspice. Add beef and mix thoroughly. Let marinate at least 15 minutes. Drain beef and reserve marinade.
  • In a sauté pan over high heat, heat about 1 to 2 tablespoons oil. Cooking in batches, add beef and stir fry until just cooked. Transfer to a plate and let cool.
  • Meanwhile, in a small saucepan, bring marinade to a boil. Lower heat and remove any scum with a spoon. Add water and simmer again. Remove from heat and set aside to cool.
  • Assemble rice rolls: Dip rice paper in water for about 10 seconds until just softened, then lay flat on a cutting board. Place about 2 to 3 beef strips on bottom half of the rice paper. Top with about 1 tablespoon each of the cucumber and carrots and roll. Repeat with remaining rice paper until all ingredients are used up. Rolls will be sticky to the touch. Serve immediately with the dipping sauce and red pepper flakes, if desired.
