Biko With Condensed Milk Recipe
An easy kakanin gets a delicious makeover!
Biko, also known as bibingkang malagkit, is an easy kakanin to make.¬†This steamed rice cake is made with glutinous rice (malagkit) that's simmered in¬†coconut milk and sugar and then topped with latik.¬†Latik is commonly made by¬†simmering coconut cream until the coconut oil is extracted and the coconut milk solids are toasted. It's a¬†deceptively simple¬†dessert¬†that's super tasty.¬†
To make this version different but no less flavorful, we made the usual biko but swapped out the¬†latik for a topping that's easier¬†to make. We mixed kitchen staples sweetened condensed milk with gata powder to create a basically better flavor for the topping with a more intense flavor.¬†
