Burong Mangga (Pickled Green Mango) Recipe
This easy pickle takes little effort to make.
Burong mangga can be a snack or a side dish to a delicious fried food meal. While you can buy this at the supermarket or even your nearest palengke, you can easily make this at home. The trick is getting your hands on some gorgeous unripe mangoes to pickle.
What is burong mangga?
"Burong mangga" means "pickled mangoes". Specifically, this commonly means pickled green or unripe mangoes. The sweetness of the mangoes has yet to be tasted in this mango, so it's delicious when the sour-sweet flavors play on your tongue when pickled.
The pickling process is simple and easy to do using water, sugar, and salt. The sourness is already in the mangoes. No other ingredients are necessary unless you want to add other flavors. (Siling labuyo, peppercorns, or even carrots are just a few that you can add to your green mangoes if desired.) What is important is that you use a sanitized container. You can easily learn how to sanitize jars. Once you have sanitized jars, immediately fill these jars, so that your burong mangga doesn't develop bacteria and cause you to get sick.
