Butterscotch Cheesecake Bars With Salted Caramel Swirl Ingredients

  • 1 Cup brown sugar
  • 2 tablespoons water
  • 1/2 Cup All-purpose cream
  • 3 tablespoons unsalted butter
  • 1 teaspoon sea salt
  • 1/2 Cup unsalted butter softened
  • 1 Cup brown sugar
  • 1 tablespoon vanilla flavoring
  • 1 large egg
  • 1 Cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon Baking soda
  • 1/8 teaspoon Salt
  • 300 Grams cream cheese at room temperature
  • 1 large egg
  • 1/4 Cup brown sugar
  • 1 teaspoon vanilla extract


  • Start by making the salted caramel: Measure the sugar and water into a medium-sized saucepan. Place the saucepan over medium heat and stir until the sugar has dissolved. Cook the sugar for 8 to 10 minutes until it has become a deep amber shade.
  • Remove from the heat and pour in the all-purpose cream. The sauce will bubble up but continue to stir until the cream is evenly combined. Add in the butter and mix until combined. Add salt slowly to taste. Set aside the caramel to cool slightly before serving/using.
  • To make the butterscotch brownies, start by preheating your oven to 350 degrees F or 170 degrees C. Lightly grease an 8x8-inch baking pan. Line with parchment paper with an overhang. Set aside.
  • Using a whisk, cream butter and brown sugar in a large bowl. Add egg and beat until the mixture is well mixed. Add vanilla flavoring and mix. Add all-purpose flour, salt, baking powder, and baking soda to the mixture and use a spatula to fold in the ingredients until well combined. Transfer batter to the prepared baking pan. Smoothen the top and set aside to prepare cream cheese batter.
  • To make the cream cheese batter, use a hand mixer to beat softened cream cheese and sugar until smooth.
  • Mix in 1 large egg and 1 teaspoon vanilla extract until well combined. Pour cream cheese batter on top of the butterscotch batter and then dot the top with salted caramel syrup.
  • Using a knife, create swirls in the top layer. Be careful not to disrupt the bottom layer. Bake in the preheated oven for 30 minutes until butterscotch has set.
  • Cool and refrigerate before serving.
