Ingredients
  

Caramelized Onion and Mushroom Spread Ingredients

  • 1/2 Cup cashew nuts
  • 1/4 Cup extra virgin olive oil
  • 1 1/2 cups onion diced, from about 4 pieces
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon Salt
  • black pepper to taste
  • 8 cups shiitake mushrooms diced
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons lemon juice

Instructions
 

  • Soak cashews in a bowl of boiling hot water for 1 hour or until soft. Drain and rinse. Set aside.
  • Heat oil in a wok or pot over medium heat. Add onions, herbs, salt, and pepper. Cook, stirring occasionally, until onions are caramelized and browned around the edges, about 7 to 9 minutes.
  • Add mushrooms and cook, stirring frequently, until softened and moisture has evaporated, about 7 minutes. Add vinegar; cook for 1 more minute. Remove from heat.
  • Process mushroom mixture, cashews, lemon juice, and ¾ cup water in a blender or food processor until completely smooth (if you’re having a hard time blending, add water by the tablespoon. The resulting mixture should be thick).
  • Chill in the refrigerator until ready to serve.
