Ingredients
  

Carrot-Cinnamon Muffins

  • 2 1/4 cups Flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 3/4 teaspoon cinnamon
  • 2/3 Cup plain yogurt
  • 2 Small Egg
  • 3/4 Cup sugar
  • 1/4 Cup Butter melted
  • 2 cups carrot grated

Instructions
 

  • Preheat oven to 350oF. Line a muffin pan with paper cups. Set aside.
  • In a bowl, sift together the first 5 ingredients.
  • In another bowl, combine the yogurt, eggs, sugar, and melted butter. Blend wel
  • Stir in the sifted dry ingredients.
  • Fold in the carrots.
  •  Pour batter into the muffin pan. Sprinkle the tops with additional sugar.
  • Bake until golden brown, about 25 minutes.
