Cashew Brittle with Sea Salt Recipe

Here’s a treat that’s the perfect balance of sweet, salty, and spicy.

A brittle is a confection made of hard sugar candy and is dotted with nuts. This recipe uses cashews but go ahead and mix in other types of nuts—peanuts, almonds, and pecans work well, too.

Ingredients
  

Cashew Brittle with Sea Salt Ingredients

  • 1 teaspoon Butter plus extra to grease
  • 1/2 Cup sugar
  • 1/4 Cup corn syrup
  • 1 Cup cashew nuts roasted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon Baking soda
  • 1 tablespoon sea salt
  • 1 teaspoon chili powder (or chili flakes)

Instructions
 

  • Grease a baking sheet with butter, or line with a silicone mat or parchment paper. Set aside.
  • Combine sugar and corn syrup in a microwaveable bowl with high sides. Microwave on high for 4 minutes.
  • Stir in cashews, then zap in the microwave on high for 3 minutes.
  • Add butter and vanilla extract; microwave for 1 minute. Gently mix in baking soda.
  • Pour mixture onto prepared baking sheet. Sprinkle with sea salt and chili. Allow to cool and harden. Break into pieces. (Brittle will keep in an airtight jar for up to 2 weeks.)
