Cauliflower Alfredo Sauce Ingredients

  • 2 medium heads cauliflower cut into florets
  • 1 tablespoon extra virgin olive oil
  • 1 large white onion diced
  • Salt to taste
  • 1 1/4 cups non-dairy milk
  • 2 cloves Garlic
  • 2 tablespoons lemon juice or 3 to 4 teaspoons calamansi juice


  • Bring a pot of water to a boil. Add cauliflower and a big pinch of salt. Cook for 5 minutes or until tender. Strain and set cauliflower aside.
  • Heat olive oil in a pan over medium-high heat. Sauté onions, salt, and pepper, stirring frequently, until translucent and golden brown, about 5 minutes. Remove from heat.
  • Place all ingredients in a blender and process until smooth. Adjust seasoning as needed. Tip: This sauce is delicious over pasta, mixed into sautéed greens, with potatoes, or stirred into rice like risotto. To increase the nutritional value of the pasta, slice zucchini into noodles using a peeler or with a mandoline and mix it in with regular pasta noodles.
