Cauliflower-Chili Recipe

Bring a pot of salted water to a boil and cook cauliflower until softened. Remove cauliflower and finely chop. Set aside. 

In a large stockpot, heat 2 tablespoons oil in medium heat and sauté onions until translucent. Add garlic and sauté until softened. Add ground beef and cook until brown. Sprinkle in chili powder and add tomato paste. Sauté until the oil turns orange. Add in the spaghetti sauce, cauliflower, and water.

Bring the sauce to a boil, then lower flame to bring the mixture down to a gentle simmer. Add in kidney beans. Season with salt and ground black pepper to taste. Serve hot topped with grated cheese.
