These are not your normal brownies! These are moist and chewy like brownies should be but are a delicious and addictive combination of salty and sweet, all thanks to the cheese.

Filipino Cheese Bar Ingredients

  • 2 cups all-purpose flour
  • 1 Cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon Salt
  • 1 large Egg
  • 1/2 Cup vegetable oil
  • 1 370-gram can sweetened condensed milk
  • 3 1/2 tablespoons powdered milk
  • 1 teaspoon vanilla flavoring
  • 1 Cup grated cheese
  • 3 large egg yolks
  • 1 370-gram can sweetened condensed milk
  • 1/2 Cup whipping cream or all-purpose cream
  • 1 Cup grated cheese


  • Preheat the oven to 170 degrees C or 138 degrees F. Grease, flour, and line with parchment paper a 8x12-inch baking pan. Set aside.
  • In a mixing bowl, sift together dry ingredients: flour, sugar, baking powder, and salt.
  • In another bowl, mix the wet ingredients well: egg, oil, condensed milk, powdered milk, and vanilla.
  • Pour the wet ingredients into the dry ingredients. Gently mix and avoid overmixing. Add 1 cup grated cheese. Mix. (The batter will be thick.)
  • Pour the batter into the prepared pan and bake for 30 to 35 minutes. Cool after baking.
  • Meanwhile, prepare the custard topping: Mix the egg yolks, condensed milk, whipping cream, and grated cheese in a bowl. Pour this cheese mixture on top of the baked cheese bars.
  • Bake for another 20 to 25 minutes or until the top is golden brown. Cool before slicing. Slice into 2”x2”-inch squares.
