Cheese Quiche Ingredients

  • 1 1/4 cups all-purpose flour plus extra for dusting
  • 1/2 teaspoon Salt
  • 1/2 teaspoon sugar
  • 1/2 Cup unsalted butter cubed
  • 2 to 4 teaspoons water ice-cold
  • 1/2 Cup bacon chopped
  • 1 1/2 cups broccoli (florets), blanched and chopped finely, plus extra for garnish
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 pieces Egg
  • 3/4 Cup whipping cream
  • 1 teaspoon nutmeg
  • 1 Cup cheddar cheese grated


  • Preheat oven to 350°F.
  • Make the crust: Combine flour, salt, and sugar on a clean work surface. Using a pastry blender or 2 knives, cut in butter; knead until texture resembles coarse sand. Add cold water, 1 tablespoon at a time, until the dough holds shape when squeezed; do not overmix.
  • Form dough into a 2-inch-thick disk. Wrap in plastic wrap and chill for 20 minutes.
  • Meanwhile, make the filling: Cook bacon in a pan over medium heat. Add broccoli and season with salt and pepper. Cook for 2 to 3 minutes. Remove from heat and let cool for 5 minutes.
  • Whisk together eggs, cream, and nutmeg in a medium bowl. Add bacon and broccoli. Add cheese and mix well.
  • Roll dough into a circle, about 11 inches in diameter. Transfer carefully to a 9-inch quiche or pie pan. At this point, you can blind bake the crust if desired. Otherwise, pour filling into crust; bake until center is set and sides are golden brown, about 40 to 45 minutes. Top with extra broccoli, if desired.
