Cheese Pizza Muffins

Preheat oven to 400ºF. Line 2 (12-cup) muffin pans with paper liners.

In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and dried basil until combined.

In another bowl, whisk together eggs, yogurt, and butter until smooth. Add bell peppers, Cheddar cheese, and sausages.

Stir in flour mixture until well combined.

Spoon batter into muffin cups, dividing evenly. Top each muffin with 1 teaspoon pizza sauce. Sprinkle with shredded mozzarella.

Bake for about 20 minutes or until golden brown. Let muffins cool in the pans for at least 5 minutes before removing, then let cool on a wire rack.

Make-ahead tip: For a snack that's ready any time, place muffins in an airtight container; freeze up to 1 month. Just thaw at room temperature or zap in the microwave for 30 seconds before indulging.
