Cheese Pizza Muffins

  • 2 cups all-purpose flour
  • 1/4 Cup sugar
  • 1 Table Spoon baking powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 teaspoon dried basil leaves
  • 2 Egg
  • 1 Cup Unsweetened Yogurt
  • 1/4 Cup Butter
  • 1/2 Cup bell pepper
  • 1 Cup cheddar cheese
  • 1/2 Cup sausage diced and cooked
  • 1/2 Cup pizza sauce
  • 1 Cup mozzarella cheese shredded


  • Preheat oven to 400ºF. Line 2 (12-cup) muffin pans with paper liners.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and dried basil until combined.
  • In another bowl, whisk together eggs, yogurt, and butter until smooth. Add bell peppers, Cheddar cheese, and sausages.
  • Stir in flour mixture until well combined.
  • Spoon batter into muffin cups, dividing evenly. Top each muffin with 1 teaspoon pizza sauce. Sprinkle with shredded mozzarella.
  • Bake for about 20 minutes or until golden brown. Let muffins cool in the pans for at least 5 minutes before removing, then let cool on a wire rack.

  • Make-ahead tip: For a snack that's ready any time, place muffins in an airtight container; freeze up to 1 month. Just thaw at room temperature or zap in the microwave for 30 seconds before indulging.
