Ingredients
  

Cheesy Broccoli Soup Ingredients

  • 1 small head brocolli cut into florets and stalk trimmed and chopped
  • 1 Table Spoon Butter Optional
  • 1 Table Spoon Oil
  • 1 Small onion chopped
  • 2 cloves Garlic chopped
  • 2 teaspoons Flour
  • 2 cups vegetable stock
  • 1/2 Cup cream
  • 1 Cup cheddar cheese grated
  • Salt
  • white pepper to taste

Instructions
 

  • Steam broccoli. Set aside.
  • In separate stockpot, heat oil and melt butter. Add onions; sauté until translucent. Add garlic; cook until aromatic.
  • Add steamed broccoli. Sprinkle in flour; cook for a few minutes until flour has absorbed the oils and the aroma of flour is no longer present.
  • Pour in stock and stir until the flour has completely dissolved and the broccoli is cooked. Set aside to cool.
  • Transfer to a blender and liquify. Strain for a smooth consistency. (For a chunkier soup, use the Pulse option on blender.)
  • Return soup to stockpot and bring to a boil. Add the grated cheddar cheese and stir until melted. Pour in cream; stir until incorporated.
  • Serve with Parmesan cheese breadsticks or your favorite croutons or crackers.
