This cheese-smothered fish dish will surely become a lunch favorite.
2 cream dory, (use fillet), cut into 3x1
2 tablspoons oil, for pan-frying paprika for sprinkling (optional)
2 tablespoon all-purpose flour
2 tablespoon butter
1/2 cup milk
1/4 cup water
1/2 cup quick-melting cheese, grated
2 tablespoon cheese spread
Clean fish and pat dry. Season well with salt and pepper; set aside.
Make the cheese sauce: Heat pan and add flour, toast for 2 to 3 minutes then add butter. When sizzling, slowly add milk and water while whisking continuously. Add grated cheese and cheese spread. Whisk until smooth. Turn off heat and keep warm.
Heat oil in a nonstick pan. Fry fish fillets for 1 to 2 minutes on each side or until cooked.
Arrange cooked fish in a container over Colorful Rice Pilaf and top with cheese sauce. Sprinkle paprika, if desired.
