Make this Mexican fave at home! Use this rice recipe to stuff Mexican-themed dishes like tacos and burritos.
3 tomatoes, cubed
1 green bell pepper
1 canned whole corn kernels
1 bottled green olives, pitted and minced
3 white rice, cooked
1 cup cheddar cheese, grated
3 teaspoons chili powder
In a bowl, mix tomatoes, bell pepper, corn kernels, andolives. Season to taste.
Transfer mixture to a large skillet or frying pan; combine with rice and cook over medium-high heat until tomato mixture is thoroughly incorporated into rice. Add cheese and mix until melted. Add chili powder for a spicy Tex-Mex kick, if desired.
