Ingredients
  

Cheesy Potato Bites

  • 4 medium Potatoes
  • water cold
  • 2 tablespoons Butter
  • 3 tablespoons milk
  • black pepper
  • Cheese sliced into 3/4-inch cubes
  • 1 piece Egg beaten
  • breadcrumbs

Instructions
 

  • Peel and slice potatoes into chunks. Place in a saucepot and cover with cold water; bring to a boil. Cook potatoes until tender, about 20 minutes.
  • Drain potatoes; transfer to a large bowl. Add butter, milk, and a pinch of black pepper. Mash potatoes with a fork  until smooth. Scoop mashed potatoes by 1 1/2 tablespoons; flatten lightly on your palm.
  • Place a 3/4-inch cube of quick-melting cheese in the center; form into a ball. Repeat with remaining mixture. Dip balls in beaten egg, coat with breadcrumbs, and deep-fry until golden brown, about 2 to 3 minutes.
