Cheesy Potato Bites
- 4 medium Potatoes
- water cold
- 2 tablespoons Butter
- 3 tablespoons milk
- black pepper
- Cheese sliced into 3/4-inch cubes
- 1 piece Egg beaten
- breadcrumbs
Instructions
- Peel and slice potatoes into chunks. Place in a saucepot and cover with cold water; bring to a boil. Cook potatoes until tender, about 20 minutes.
- Drain potatoes; transfer to a large bowl. Add butter, milk, and a pinch of black pepper. Mash potatoes with a fork until smooth. Scoop mashed potatoes by 1 1/2 tablespoons; flatten lightly on your palm.
- Place a 3/4-inch cube of quick-melting cheese in the center; form into a ball. Repeat with remaining mixture. Dip balls in beaten egg, coat with breadcrumbs, and deep-fry until golden brown, about 2 to 3 minutes.
