Chicken Alfredo Pasta Ingredients

  • 1/2 kilos chicken breast fillets
  • 1/2 teaspoon Salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1/2 teaspoon dried basil
  • 2 tablespoons unsalted butter or margarine, divided
  • 1 tablespoon olive oil
  • 500 Grams fettuccine
  • 1 medium-sized white onion chopped
  • 3 cloves Garlic chopped
  • 400 Grams canned sliced mushrooms drained
  • 1 Cup All-purpose cream
  • 1 piece chicken cube
  • 3 cups water
  • 1/2 Cup cheddar cheese grated
  • 1/2 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning Optional
  • 1/4 Cup parmesan cheese grated, optional
  • 1 Cup fresh parsley chopped, plus extra for garnish


  • Season the chicken breast fillets with salt, black pepper, and dried ground basil.
  • In a pan, melt 1 tablespoon butter over a low-medium heat.
  • Add olive oil and fry the seasoned chicken breast fillets until cooked. Set aside. Slice chicken breast fillets into strips when ready to serve. 
  • Cook the pasta according to package instructions. Drain and set aside.
  • To make the white sauce: In a saucepan, melt the remaining butter and the oil in the pan used in frying the chicken.
  • Saute onion and garlic. Add sliced mushrooms and cook until lightly brown.
  • Pour in the all-purpose cream and cook, stirring occasionally.
  • Make the chicken broth by dissolving 1 chicken cube in 3 cups water. Pour the chicken broth into the saucepan, and stir. Simmer and cook for about 8 minutes.
  • Add the cheddar cheese, salt, and pepper. If, desired, add Italian seasoning depending on your preference. Add grated Parmesan cheese if preferred.
  • Add chopped parsley and let simmer until the sauce thickens, stirring occasionally.
  • Add and mix in cooked pasta until well coated.
  • To serve, garnish the pasta with chopped parsley and Parmesan cheese. Top with sliced chicken breast fillets.
