Chicken and Prawn Wonton Noodle Soup

Make the wontons: mix all ingredients (except the wonton wrappers) in a bowl until well incorporated. place a tablespoon of filling in the center of a wonton wrapper. Dampen the edges of the wrapper with water to seal. Fold to make a triangle, then take the 2 opposing points together and seal to make a cardinal hat. Repeat to make a total of 24 pieces. place the wontons on a floured pan; keep in the refrigerator or freezer until ready to use.

 Make the broth: place all the ingredients in a stockpot. Bring to a boil, then simmer for 20 minutes. strain and discard the solids. set aside.

When ready to serve, bring broth back to a boil. add wontons; cook for 2 to 3 minutes or until the dumplings float to the surface. Blanch bok choy in broth and set aside.

Portion cooked noodles among 4 serving bowls. arrange bok choy on top of the noodles. add broth and dumplings. garnish with ginger strips and green onions.

Tip: No time to make your own dumplings? The frozen kind will work just as well in this recipe.
