This hearty chowder is perfect for rainy nights!
1 tablespoon vegetable oil
2 pieces chorizo, cubed
1 medium white onion, chopped
1/2 cup chicken, (use breast part), cubed
3 cups water
1/2 cup milk
1 large potatoes, cubed
1 medium carrot, cubed
1 cup corn kernels
1/2 teaspoon cornstarch
salt, to taste
pepper, to taste
Heat oil in a medium pot. Cook chorizo until fat is rendered. Add onions; saute until translucent.Add chicken; cook for 10 minutes.
Add water and milk; allow to boil for 5 minutes. Add potato, carrot, and corn kernels.
Set aside 2 tablespoons of the liquid in a small bowl. Mix in cornstarch until it dissolves; add mixture back to the pot. Let chowder simmer until thick, about 15 minutes.
