3 pieces chicken, (use breast part), deboned, skin on,pounded until 1/4-inch thick

few pinches of pepper

1/4 cup plus 1/2 tablespoon butter, melted and cooled a bit, plus more for cooking

250 grams pork, use ground pork

3 pieces vienna sausage, crumbled

2 tablespoons pickle relish

3 pieces day-old bread, cut into cubes

1/2 piece chorizo, chopped finely

3 tablespoons ham, finely chopped

1 egg

2 tablespoons cheddar cheese, grated

3 tablespoons dried cranberries, rehydrated in warm water and drained

3 tablespoons pistachio nuts, coarsely chopped

1 teaspoon salt

1/2 teaspoon pepper
