This Filipino chicken stew is a rich and flavorful meal: grated cheese and liver spread make the caldereta sauce richer while others add olives to make it a party-worthy dish.

This dish is often confused with the mechado, but this caldereta dish has a thicker and richer sauce, due in part to the cheese  and liver spread. Want to make an extra indulgent version? Play around with liver pate and sweet potatoes (kamote) to add different flavors.

Ingredients
  

Kalderetang Manok (Chicken Caldereta) Ingredients

  • 2 tablespoons cooking oil
  • 1/2 tablespoons Garlic
  • 1 medium onion chopped
  • 1 kilo Chicken cut into 8 pieces
  • 500 Grams Tomato sauce
  • 1 85-gram can liver spread
  • 1/2 Cup cheddar cheese grated
  • 1/2 kilo Potatoes peeled and quartered
  • 1 medium carrot sliced
  • 2 pieces red bell pepper seeded and sliced
  • 1/2 Cup green peas
  • Salt to taste

Instructions
 

  • Preheat medium pot and add cooking oil. Saute garlic ang onion until translucent.
  • Add the chicken and saute for about 10 minutes until browned.
  • Add the tomato sauce and liver spread and let it simmer for 10 minutes.
  • Add the grated cheese, potatoes, carrots, green peas, and bell pepper. Adjust taste by adding salt and pepper. Cover and let it simmer for 10 minutes.
