Ingredients
  

Chicken Estofado Ingredients

  • 1 whole Chicken cut into 12 to 15 pieces
  • 2/3 Cup Vinegar
  • 1/2 Cup brown sugar
  • 1/2 Cup Soy Sauce
  • 2 pieces bay leaf
  • 1 tablespoon peppercorns whole
  • 1 1/2 tablespoons Garlic minced
  • 2-3 cups water
  • Salt to taste
  • Pepper to taste

Instructions
 

  •  Combine all ingredients except the water in a deep casserole. Marinate for 30 minutes to 1 hour.
  • Add water and mix thoroughly. Let mixture boil for 10 to 15 minutes. Remove the impurities that form  on the surface.
     
  • Simmer for 30 to 45 minutes more or until chicken is tender. Season to taste with salt and pepper.
