Chicken Estofado With Bananas Recipe

Estofadong manok, or chicken estofado, can be as simple as an adobong manok recipe. You toss the ingredients together, let them marinate, and then cook. Learning how to cook chicken estofado in this way is not only easy and simple; you end up with a delicious meal, too. 

However, some recipes call for other ingredients to make it even better. This chicken estofado with banana recipe is just that. The tangy and sweet sauce is bolstered with bananas to make it not just heartier, but also a little sweeter, too. This isn’t a your regular chicken estofado recipe!

Chicken Estofado With Bananas Ingredients

  • 3 tablespoons Oil
  • 3 pieces green bananas sliced
  • 1 Small carrots sliced
  • 1 medium potato sliced
  • 1 medium red onion chopped
  • 4 cloves Garlic chopped
  • 1 kilogram Chicken cut into serving pieces
  • 4 tablespoons Soy Sauce
  • 1 Cup water
  • 2 tablespoons Vinegar
  • 1 Cup Tomato sauce
  • 2 tablespoons brown sugar or muscovado sugar
  • Salt to taste
  • ground black pepper to taste


  • Heat oil in a medium pan over medium heat. Fry the banana, carrots and potato for 3 to 5 minutes. Remove from heat and drain on paper towels.
  • Using the same pan, sauté onion and garlic until fragrant. Add the chicken and cook for 3 to 5 minutes each side or turns slightly brown.
  • Add the soy sauce and water, and let simmer for about 10 minutes. Add the vinegar (do not stir), and let cook for another 3 minutes. Add the tomato sauce and brown sugar. Simmer for another 10 minutes or until chicken is cooked through. Season with salt and pepper.
  • Add in the banana, carrots, and potato. Remove from heat. Serve.
