Chicken Estofado Ingredients

1 whole chicken, cut into 12 to 15 pieces

2/3 cup vinegar

1/2 cup brown sugar

1/2 cup soy sauce

2 pieces bay leaf

1 tablespoon peppercorns, whole

1 1/2 tablespoons garlic, minced

2-3 cups water

salt, to taste

pepper, to taste

How to cook Chicken Estofado

Combine all ingredients except the water in a deep casserole. Marinate for 30 minutes to 1 hour.

Add water and mix thoroughly. Let mixture boil for 10 to 15 minutes. Remove the impurities that form on the surface.

Simmer for 30 to 45 minutes more or until chicken is tender. Season to taste with salt and pepper.
