Chicken Longganisa Muffin Sandwich

Calling all longganisa lovers: Here’s a tasty sandwich for you! A homemade longganisa patty, together with a fried egg on a perfectly toasted muffin, makes for the perfect grab-and-go breakfast.

Ingredients
  

Chicken Longganisa Muffin Sandwich

  • 1/2 kilo Chicken use ground chicken
  • 5 tablespoons liquid seasoning
  • 3 tablespoons sugar
  • 1 teaspoon black pepper
  • 1/2 teaspoon Salt
  • vegetable oil for frying
  • 2 and 1/2 tablespoons Butter softened
  • 5 English muffins split in half
  • 2 and 1/2 tablespoons mayonnaise
  • 5 Egg fried sunny side up
  • 5 tablespoons Papaya Atsara (optional), plus extra to serve

Instructions
 

  • Make the chicken longganisa: Combine all ingredients in a bowl. Form mixture into 3-inch patties and refrigerate for 30 minutes.
  • Heat oil in a frying pan. Cook 1/2-longganisa patties for 5 minutes on each side. Transfer to a plate and keep warm.
  • Spread butter on the insides of the english muffins. Toast until warm. Spread mayonnaise on the insides. Arrange chicken longganisa patty on the bottom half of the muffin. place the fried egg on top of the patty. Top with a spoonful of atchara, if using. Cover with the top half of the muffin. Repeat with the remaining ingredients.
  • Serve with extra atsara on the side, if desired.
