Ingredients
Chicken Mango with Curry Ingredients
- 1 piece chicken bouillon cube dissolved in
- 1/2 Cup water
- 2 teaspoons dayap peel grated
- 2 teaspoons dayap juice
- 2 teaspoons brown sugar
- 2 teaspoons curry powder
- 1 teaspoon cooking oil
- 1 teaspoon cornstarch
- 1 medium red onion sliced
- 1 Table Spoon Garlic minced
- 5 to 6 pieces Chicken (use boneless chicken breast), cut in bite size strips
- 2 cups ripe mango peeled and cubed
Instructions
- In a bowl, mix together dissolved chicken bouillon, lime peel and juice, brown sugar, curry powder, and cornstarch. Set aside.
- Add a little cooking oil to a hot pan. Sauté onion and garlic until light golden brown. Set aside.
- Add the rest of the oil in the same pan; stir-fry chicken for a few minutes. When cooked through, push chicken pieces aside.
- Pour sauce mixture in the center of pan and cook until thick and bubbly. Add mangoes.
- Stir in chicken pieces and cook for a couple of minutes more.
- Serve hot with rice.
