Chicken Noodle Soup Recipe

Bring chicken broth to a boil in a sauce pot. Add chicken fillet and let cook for about 3 to 4 minutes. 

Remove chicken from pot; set aside to cool slightly. Continue to simmer stock. Shred chicken and set aside. 

Add star anise, bay leaves, and fish sauce to pot. Add noodles and shredded chicken. Transfer to bowls. Season with lime juice. Top with cilantro and shallots. Serve with lime wedges on the side, if desired.
