Chicken Quesadilla with Peppers Recipe

Ingredients
  

Chicken Quesadilla with Peppers Ingredients

  • 1/4 kilo Chicken (use boneless chicken breast), diced
  • 1 packet Seasoning Mix
  • 3 tablespoons Oil
  • 1 medium onion sliced
  • 1 piece each bell peppers (use red, green, and yellow bell peppers (sliced thinly)), sliced thinly
  • 1/2 Cup Butter melted
  • 10 pieces Wheat Tortillas
  • 1 Cup cheddar cheese grated

Instructions
 

  • Coat chicken pieces with fajita seasoning mix.
  • In a heated pan, add 2 tablespoons oil and pan-fry chicken on medium-high heat for about 8 to 10 minutes. Set aside.
  • In the same pan, add remaining oil and sauté onions until translucent. Add bell peppers and cook for a few minutes, stirring constantly. When the vegetables have softened, add cooked chicken. Stir.
  • Preheat oven to 350°F.
  • Line baking sheet with parchment paper or greased foil. Butter one side of the tortilla. Lay this on the baking sheet, buttered side up. Spread chicken-bell peppers mixture on the tortilla and top with grated cheese.
     
  • Butter another piece of tortilla, this time, brushing both sides. Lay this tortilla on top of the filling.
     
  • Bake quesadillas in the oven until cheese melts, about 8 minutes.
  • Repeat with the rest of the tortillas. Slice into wedges before serving.
