Ingredients
Chicken Satay Ingredients
- 250 Grams Chicken (use breast part), sliced
- 8 to 10 bamboo sticks
- 1 tablespoon Luyang Dilaw chopped
- 1 tablespoon Garlic chopped
- 1/2 tablespoon red onion chopped
- 1 teaspoon ginger grated
- 1 tablespoon lemongrass (tanglad) white part only, chopped
- 1 teaspoon brown sugar
- 1 tablespoon lime juice
- 2 teaspoons canola oil
- Salt to taste
- 1 tablespoon peanut butter
- 1 tablespoon kecap manis (Indonesian sweet soy sauce)
- 2 teaspoons lime juice
- 1 teaspoon Garlic chopped
- Salt to taste
- water to dilute
- Cucumber sliced, for garnish
- cilantro sprigs for garnish
Instructions
- Combine all ingredients for marinade and pound with a mortar and pestle until you have a paste. Mix well and season to taste. Mix this marinade with the sliced chicken and marinate for 4-6 hours.
- Skewer the chicken slices onto the sticks. Heat grill pan over medium high heat and grill the chicken skewers about 3-4 minutes per side or until cooked.
- Combine all ingredients for the sauce and mix well. Season to taste and serve with the chicken.
