Chicken and Cranberry Wrap Ingredients

  • 2 tablespoons Calamansi Juice divided
  • 1 tablespoon Soy Sauce
  • 2 150 gram fillets Chicken (use breast part), sliced thinly
  • 1 teaspoon cooking oil
  • 1/4 Cup celery chopped
  • 1/2 Cup mayonnaise
  • 3 tablespoons dried cranberries chopped
  • Salt to taste
  • 4 whole wheat Tortilla
  • 8 to 12 Romaine lettuce


  • Combine 1 tablespoon calamansi juice and soy sauce in a bowl. Add chicken and marinate for 15 minutes.
  • Heat oil in a skillet over medium heat. Pan-fry chicken for 5 minutes on each side. Set aside and let cool. Shred or chop into bite-sized pieces.
  • Combine celery, mayonnaise, and cranberries in a bowl. Add chicken and remaining calamansi juice. Season with salt and pepper to taste.
  • Heat tortillas on a grill pan or toaster oven.
  • Lay tortilla on a flat surface. Place 2 to 3 lettuce leaves on the center, then top with 2 to 3 tablespoons chicken-cranberry mixture. Fold ends, roll, and secure with a toothpick.
