Ingredients
Chocolate Banana Cupcake With Nutella Frosting Ingredients
- 3 to 5 pieces ripe bananas (lakatan variety)
- 2 cups all-purpose flour
- 1/2 Cup Dutch-processed cocoa powder or alkalized cocoa powder
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1/2 Cup vegetable oil
- 1/2 Cup brown sugar or honey
- 1/2 Cup brown sugar
- 1 large Egg
- 1 teaspoon vanilla extract
- 1 Cup chocolate chips
- 3/4 Cup unsalted butter softened but still cold
- 1 Cup Nutella or any chocolate hazelnut spread
- 3/4 to 1 Cup confectioners or powdered sugar sifted
- 1 teaspoon vanilla extract
- 2 tablespoons whipping cream chilled, or all-purpose cream
Instructions
- Make the cupcakes: Preheat the oven at 180 degrees c or 350 degrees F. Place 2-ounce (about 30 ml or 2 tablespoon) cupcake liners in a 12-cup cupcake pan. Set aside.
- Mash 3 to 5 bananas to make 2 cups. Set aside.
- Sift together, all-purpose flour, cocoa powder, baking soda and salt in one bowl.
- Mix together bananas, vegetable oil, sugars, egg and vanilla in another bowl.
- Stir the dry ingredients into the wet ingredients. Fold in the chocolate chips.
- Scoop the batter into the cupcake liners. Bake for 30 to 40 minutes in the oven.
- Remove the cupcakes from the oven and cool on a wire rack.
- Make the Nutella frosting: Cream butter and Nutella together in a mixer until completely combined. Scrape down the sides of the bowl.
- Add powdered sugar in 3 parts. Mix well until well combined.
- Add the vanilla and whipping cream, and keep on mixing until light and fluffy.
- To assemble, pipe the buttercream on top of the cooled cupcakes.
