  • 3/4 Cup unsalted butter
  • 1 Cup brown sugar
  • 1/2 Cup white sugar
  • 1 large Egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 teaspoons instant coffee powder
  • 1 teaspoon Baking soda
  • 2 teaspoons cornstarch
  • 1/2 teaspoon Salt
  • 2 cups all-purpose flour

  • 1/2 Cup dark chocolate chips

  • Cream butter and sugars in a large bowl. (Alternatively, you can do this using an electric mixer fitted with the paddle attachment.)
  • Add egg, egg yolk, and vanilla extract; stir to combine. Add coffee powder, baking soda, cornstarch, salt, and flour; mix until dough comes together.
  • Fold in chocolate chips. Cover with plastic wrap and chill for at least 1 hour or overnight.
  • Preheat oven to 350ºF. Line 2 baking sheets with silicone mats or parchment paper.
  • Scoop out dough using a small ice cream scooper and place on prepared baking sheets, spacing them about 1½ inches apart.
  • Bake in the preheated oven for about 8 to 10 minutes, rotating pans halfway through baking to ensure even cooking. Let cool completely on baking sheets before serving.
