Ingredients
  

Chorizo, Kangkong, and Garbanzo Stew Ingredients

  • 1 210-gram can Chorizo de Bilbao sliced, oil reserved
  • 1 Small red onion peeled, chopped
  • 1 clove Garlic peeled, chopped
  • 1 220-gram can pork and beans
  • 1 450-gram can garbanzos drained
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground paprika
  • 1/4 teaspoon Cayenne pepper or to taste
  • 1 bunch kangkong leaves roughly chopped
  • Salt to taste
  • ground black pepper to taste

Instructions
 

  • In a sauté pan over medium heat, melt about 1 Tbsp. chorizo oil. Sauté onion then garlic until softened. Add chorizo, and cook, stirring, until heated through. Stir in pork and beans and garbanzos.
  • Sprinkle in cumin, paprika, cayenne, and salt and pepper, to taste. Simmer until liquid has reduced. Stir in kangkong leaves, and cook until wilted. Remove from heat. Serve with garlic rice. Recipe originally published in the June 2017 issue of Good Housekeeping Philippines.
