Delectable cookies made more chewy by oatmeal and coconut.
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla powder
1/2 cup sugar
1 cup coconut (buko), (dessicated), toasted
1/2 cup quick-cooking oatmeal
1/2 cup brown sugar
In a large mixing bowl, mix flour, baking powder, baking soda, and vanilla powder. Set aside.
In about a 1-liter recycled jar with a lid, spoon in sugar and shake gently until level. Add chips and level out. Spoon in, by layers, the coconut, oatmeal, brown sugar, and fi nally the fl our mixture. Seal jar.
Before giving away, attach the following instructions to the jar: Preheat oven to 350?F. Grease and line a cookie sheet with parchment paper. In a large bowl, mix 1?2 cup softened butter and 1 egg with the cookie mix. Roll into balls, place on prepared sheet, and bake for 8 minutes. Cool.
