Coconut Loaf Cake Ingredients

  • 1/2 Cup unsalted butter softened
  • 1 Cup sugar
  • 3 large eggs lightly beaten
  • 1 1/2 cups all-purpose flour sifted
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon Salt
  • 1 Cup coconut milk
  • 1 Cup dessicated coconut
  • 1 Cup confectioners sugar sifted
  • 3 tablespoons coconut milk
  • 1/4 Cup dessicated coconut toasted, for topping


  • Preheat oven to 350 degrees F (175 degrees C). Grease and line 2 7x3.5-inch loaf pans. Set aside.
  • Cream butter and sugar in a bowl until light and fluffy. Add eggs and stir to mix.
  • Combine flour, baking powder, and salt in another bowl. Add flour mixture to the butter mixture in two batches, alternating with the coconut milk. Whisk until well combined. Add desiccated coconut and whisk to mix.
  • Pour batter into prepared loaf pans. Bake in the preheated oven for 45 to 55 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool in pans. Remove from pans and transfer to a wire rack to cool completely.
  • Make the topping: Mix together confectioner’s sugar and coconut milk. Spread over loaf cakes. Sprinkle desiccated coconut on top. Slice to serve.
