This chunky chowder is comforting and tasty!
1/2 cup shaped pasta
1 table spoon butter
1 piece onion, chopped
2 cloves garlic, chopped
1 can corned beef
1 cup mixed vegetables, thawed
1 cup leftover ham, cubed
1/2 teaspoon italian seasoning
2 cups potato soup
1 cup tomato soup
Bring a stockpot of water to a rolling boil. Cook pasta until al dente. Set aside 1 cup of pasta cooking water then drain pasta. Set aside.
Meanwhile, in another stockpot over medium heat, melt butter. Add onions and garlic, sautéing until soft. Add corned beef and sauté until dry. Add mixed vegetables and ham. Add Italian seasoning and heat until aromatic.
Pour in soups, pasta, and 1?2 cup water and cook until mixture begins to simmer. Adjust seasoning to taste and add more reserved pasta water, if necessary. Serve hot with crostinis.
