Cracker-crusted Fish Fillet with Yogurt Honey Mustard Dip

This fish recipe makes use of crackers as breading! Whole wheat crackers are new in our market but are readily available in most large chains. Substituting regular crackers with these is a no-brainer—they taste delicious! Another healthy move: Making yogurt the base for the dip. The natural tanginess of the yogurt works well with the honey and mustard and gives it a guilt-free creaminess.

Ingredients
  

Cracker-crusted Fish Fillet with Yogurt Honey Mustard Dip

  • 3/4 Cup plain yogurt liquids drained to make it thicker (use a cheesecloth or a fine-sieved strainer)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons wild honey
  • Salt to taste
  • 4 fillets white fish patted dry with paper towels
  • 1 Egg (white), whipped until soft peaks form
  • 4 tablespoons all-purpose flour
  • Salt
  • Pepper
  • 1 Cup whole-wheat crackers crushed

Instructions
 

  • Prepare the yogurt-honey mustard dip: Combine ingredients well together in a bowl. Set aside.
  • Coat fish fillets in seasoned flour, dip in egg whites, then roll and coat with crushed crackers.
  • Line fillets on a nonstick baking tray and spray gently with some oil. Bake on a preheated oven 375F for 10 to 12 minutes until the fish is cooked through.
