Creamy Chicken Mushroom with Kangkong Recipe

Heat enough oil in a skillet or saute pan for pan frying. Season chicken breasts on both sides with salt and ground black pepper, to taste. Place chicken skin side down in the oil. Fry chicken on both sides until cooked through. Transfer to a plate, and set aside.

Remove oil, leaving just enough for sauteing. Add garlic and cook until just translucent and softened. Add the mushrooms, and saute until browned about 3 minutes. Sprinkle and stir in flour. While stirring, add water and then evaporated milk. Add liquid seasoning, if using. Stir to combine, scrubbing any fond on the bottom of the pan that hasn't loosened into the sauce. Season with salt and pepper to taste. 

Stir in kangkong leaves and cook until just wilted. Return chicken to the pan, and cook until just heated through. Adjust seasoning accordingly. Spoon sauce over the chicken, and serve while hot.
